F1 Bake Off – Round 14 – Italy

A beautifully simple and delicious recipe for Italy, courtesy of Gino D’Acampo.

An orange and raspberry oven baked cheesecake … and I can confirm it is very, very tasty.

The perfect munch for this weekend’s race at Monza.

The recipe I used was from Gino D’Acampo’s website and without further ado, here’s how you make it:

Orange & raspberry oven-baked cheesecake

Ingredients

  • 2 tablespoons orange liqueur
  • 600g cream cheese, at room temperature
  • 180g caster sugar
  • 3 eggs, lightly beaten
  • 1 teaspoon orange flower water
  • 3 tablespoons plain white flour
  • Grated zest of 1 orange
  • 80g candied fruits, finely chopped
  • 200g raspberries
  • Icing sugar to decorate

Method

  • Preheat the oven to 180 C / Gas Mark 4 / 350 F /160 C (Fan)
  • Butter a 23cm springform cake tin.
  • In a large bowl, beat together the orange liqueur, cream cheese and caster sugar
  • Beat in the eggs bit by bit until fully combined
  • Mix in the orange flower water
  • Then add the flour and orange zest
  • Beat well until everything is combined
  • Fold through the candied fruits and raspberries
  • Spoon the mixture into the prepared tin, tapping it against the work surface to remove any bubbles
  • Bake in the middle of the oven for 35 minutes until the edges of the cake are firm but the centre is still slightly wobbly
  • Set aside to cool for 30 minutes
  • Run a sharp knife around the edge of the cake to loosen it, then remove it from the tin
  • Serve with a little icing sugar sprinkled on top

NOTES

  • I didn’t have any orange liqueur to hand, so I just substituted with fresh orange juice
  • I’m not a fan of orange blossom water (any more than I am of rose water) so I simply omitted this from the recipe
  • Ditto candied fruits … don’t know what it is about them, but I’m just not a fan
  • Can’t say that omitting and substituting detracted from the lushness of this very tasty cheesecake (have I mentioned that already?)

Here’s how mine turned out:

And here’s how I made it:

Don’t think I could eat a cheese cake without a crumbed digestive biscuit base!!
